type='text'>Recette de la Gardiane</title><content type='html'>2 kg de taureau, sel.&lt;br /&gt;pour la marinade - 1 litre de vin rouge, 2 oignons, 3 carottes, 1 branche de celeri, 4 gousses d'ail, 1 zeste d'orange, farine, pain sec, sel, poivre&lt;br /&gt;1. Faire mariner la viande la veille dans le vin rouge dans lequel vous aurez pris soin d'emincer les oignons, les carottes, ail, la branche de celeri decoupee en petits des, avec le vinaigre et les zestes.&lt;br /&gt;2. Le lendemain, faites revenir les lardons de petit sale dans la cocotte.&lt;br /&gt;3. Egouttez la viande, roulez chaque morceau dans un peu de farine et faites-le revenir a feu vif dans la cocotte.  Puis ajoutez la marinade.  Couvrez la cocotte et laissez cuire quatre bonnes heures.&lt;br /&gt;4.
